Donica, Roasted garlic and grated garlic will taste much different. Roasted garlic has a mild, sweet and nutty flavor compared to grated garlic, which has a pungent and sharp taste. Roasting caramelizes the natural sugars, which results in a sweet, caramelized flavor. The process also mellows the garlic’s sharpness and pungency, making it more subtle and mild. Grated garlic, on the other hand, has a stronger and sharper flavor profile. Grating garlic releases its potent oils and enzymes, which can be overpowering if used in excess. In comparison to roasted garlic, grated garlic lacks the sweetness and nuttiness that comes with the caramelization process of roasting.

I am happy you enjoyed the recipe, but next time try roasting the garlic first, it will taste so much better. 🙂

I didn’t have time to roast the garlic so I opted for the grated garlic. I love garlic, but in my opinion it was too strong. I would start with one clove of garlic and go up from there. Other than that, it was great! Very simple, creamy and delicious!
