This info is perfect! Trying to make frozen fries for my grandson instead of package so there’s little oil. I cut the fries, soaked i water, flash froze and then bagged. They would turn black! Thank you for teaching us!

Hi Greg, Yes, frying is a good way to precook the fries before freezing instead of blanching. You’ll have to experiment with the timing, but fry until the potatoes are cooked through, and then drain, cool, and freeze. When you are ready to cook, I would still double fry to get that five guys extra crispy-ness. Deep-fry the frozen fries in 325˚F oil until light brown, remove, and drain. Increase the oil temperature to 350˚F and deep fry again until golden brown. Now I am hungry!

It’s not an incredible tedious process to do it fresh…just need time for the potatoes to soak after cutting. I want to achieve “five guys” French fries which are double fried. Can i fry them instead of blanching in water, and secondly, if i put the frozen fries in the oil, will I achieve that dark, crispy color five guys fries accomplish? Thanks I’m advance!
