I am so excited to find your New England version of American Chopped Suey.
My husband requested that I make my American Chopped Suey recipe and unfortunalely, I could not find it. I was soooo pleased to come across your recipe.
We were both born & raised in Maine & this is very simular to my Mum’s recipe.

Jen, Yes, you can definitely adapt this recipe for a slow cooker! Here’s how:

1. Brown the ground beef in a skillet over medium-high heat until it’s no longer pink. Drain any excess grease.
2. Transfer the browned beef to the slow cooker.
3. Add in the diced onions, bell peppers, garlic, tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper.
4. Stir everything together until well combined.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together.
6. About 30 minutes before serving, stir in the cooked pasta, top with cheese, and allow it to heat through.
7. Serve hot with your favorite toppings, such as grated cheese or fresh parsley.
