Carla, Congratulations on your first harvest of hardneck garlic! When curing garlic, it’s essential to allow the stalks to dry completely. The curing process typically takes around 2 to 4 weeks, depending on the climate and humidity levels.

Regarding the scapes or flower stalks, they are edible and can be used in various dishes. Harvest them when they are still tender for the best flavor. However, since your scapes have bloomed and formed seeds, they are no longer as tender and are likely too fibrous to be used as scapes. You can still collect the seeds and use them for planting in future garlic crops. Alternatively, you can freeze them and then use them to help flavor homemade stocks.

My question has to do with how long you leave the stock while curing? I did not remove the scapes while they were still tender, so I also have all the flowers that bloomed, and now look like they are seeds; what can you do with these?

Donna, Flies on garlic are extremely unusual. Garlic contains a natural sulfur compound that deters flies. There is a pest called an onion fly. The larvae that can damage the bulbs of garlic and onions. You may have luck identifying the flies by sending a photo to your local extension office https://ask2.extension.org/
