However, once the seeds have sprouted, it’s important to keep the lights about 2 inches above the plants to avoid burning the leaves. You can adjust the height as the plants grow. Sue, I haven’t gone into specific numbers, but we do enjoy fresh salad greens, spinach, herbs, baby root vegetables all winter. Depending on the amount of space and types of crops you grow, it could become a good supplement to regular shopping, but you would have to experiment to get an idea on the full potential.
